Cassava Parmesan Fries with Truffle Mayo

CASSAVA FRIES
- 1 bag frozen Yucammy cassava fries
- Oil for frying
TRUFFLE MAYO
- 150 g mayonnaise (store-bought or homemade)
- 1–2 tsp truffle oil (to taste)
- 1 tsp lemon juice
- A pinch of salt
TOPPING
- 40–60 g Parmesan cheese, freshly grated
Heat the oil in a deep fryer to 180°C (350°F). Fry the frozen cassava fries directly from the freezer for 4 to 5 minutes, or until golden and crispy.
Remove and drain on paper towels. Lightly salt while still hot.
Mix the mayonnaise with the truffle oil, lemon juice, and a pinch of salt. Adjust the truffle flavor to your liking.
Alternatively, you can use a high-quality store-bought truffle mayonnaise for convenience.
Homemade mayonnaise option:
Whisk 1 egg yolk with 1 tsp mustard and 1 tbsp vinegar. Slowly drizzle in 120 ml neutral oil while whisking continuously until thick and creamy, then add truffle oil as above.
Place the hot cassava fries on a serving plate. Generously sprinkle freshly grated Parmesan over the top so it melts slightly.
Serve immediately with the truffle mayo on the side or drizzled over the fries.
