Cassava Cheese & Bacon Fries

CASSAVA FRIES
- 1 bag frozen cassava fries (Yucammy or similar)
- Oil for frying
CHEESE SAUCE
- 120 g cheddar cheese, shredded
- 80 ml heavy cream
- 1 tsp Dijon mustard (optional)
- A pinch of salt and pepper
TOPPING
- 80 g bacon, diced
Heat the oil in a deep fryer to 180°C (350°F). Fry the frozen cassava fries directly from the freezer for 4 to 5 minutes, or until golden and crispy.
Remove and drain on paper towels. Lightly salt while still hot.
In a small saucepan over low heat, warm the cream until hot but not boiling. Add the shredded cheddar and stir until fully melted and smooth.
Add the mustard if using, then season with salt and pepper. Keep warm on very low heat.
In a skillet over medium heat, cook the diced bacon until crispy. Remove and drain on paper towels to remove excess fat.
Place the hot cassava fries on a serving plate. Pour the warm cheddar sauce generously over the fries, then sprinkle with crispy bacon pieces. Serve immediately.
